Autumn Harvest Pork Roast

So simple and easy to make in the slow cooker! Sauced with the fruits of a fall harvest – apples and cranberries – this classic pork roast is packed with flavor and as colorful as an autumn day.
1/2 tablespoon olive oil
2 1/2 pound boneless pork loin rib end roast
1 (12-ounce) package frozen Stouffer’s Harvest Apples
1 (14-ounce) can whole berry cranberry sauce
1 cup Catalina salad dressing
2 tablespoons onion soup mix
Place oil in a large nonstick skillet over medium heat. When oil is hot, add pork loin and brown all sides, about 3 minutes. Transfer pork to a 4-quart slow cooker.
Microwave apples according to manufacturer’s instructions, about 5 minutes. Mix cranberry sauce, salad dressing, onion soup mix, and apples together in a medium bowl. Pour mixture over pork loin. Cover and cook on low setting for 4 hours.
To serve: Thinly slice pork and serve topped with fruit sauce. Place remaining sauce in a bowl and offer it on the side.
